Casone Ugolino’s Cooking School is based on the respect of the products of nature, the traditions, and the land. This “natural” cuisine puts the Human Being – together with its environment, know-how, and traditions – at the very heart of its project. The fundamental principle of this philosophy is that the more one distances themselves from Nature, the more one loses authentic flavours – that is, the more one distances themselves from traditions, the more one loses the identity and uniqueness of the territory one lives in.

he agricultural origin and seasonality of products, the natural cuisine, the awareness of being in harmony with Nature

the local agricultural production, the small agricultural companies of the territory, the local culinary tradition

the rise in prices on the global market and the environmental impact of international trade
